Award Winning Pecan Pie Recipe
Over the summer I was hanging out at our family yacht. Who am I kidding, some generous family members loaned it to us for the weekend so we could get a taste of the high life 😉
One of the magazines on board had pie recipes that were submitted to a national pie contest. I took a picture of the recipes with a note to make them in the fall. The winner was this simple Pecan Pie and I made it for Thanksgiving.
Not only was it very easy to make but it was delicious.
Pecan Pie
Serves 8
- 1 Pie Crust
Filling:
- 1 cup light corn syrup
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 TB melted butter
- 2 tsp vanilla extract
- 1/2 tsp salt
- 3 eggs lightly beaten
- 1 1/4 cup roughly chopped pecans, plus 24 pretty halves for decoration.
Directions:
1. Heat oven to 350. Whisk corn syrup, sugars, butter, vanilla, salt and eggs in a bowl. Fold in chopped pecans. Pour into pie crust. Arrange pretty halves decoratively aroun the inside edge of the pie crust.
Bake until crust is golden brown and filling set, about 1 hour.
Let cool completely before serving.
yum….tis the season!. We were disappointed that y’all didn’t make it up this summer. Oh well. Maybe next time. I just got home from sf. Juno invited me to go trick and treating with them. We had a great time. Aylen went along in her dad’s Ergo and seemed to like the ride. They all seem to be settling into a pretty nice routine. Baby Aylen is a calm, sweet girl who is still pretty much in the eat, burp, sleep…and do it again mode. Thriving. Weighs 11 pounds as of Friday. Hope all is well with you, Steve, and the boys……Time goes fast. I love you……
